1/4 cup cornstarch 1/3 cup dextrose sugar 1 envelope unflavored gelatin 1/3 cup water 2/3 cup dextrose 1/2 cup corn syrup (glucose syrup) 1 teaspoon vanilla (fructose free)
Sift cornstarch and 1/3 cup dextrose sugar into a bowl. Grease a 8x8 pan and sprinkle 1 tablespoon of the cornstarch/sugar mix in the pan. Tilt the pan to coat the bottom and sides.
Sprinkle gelatin into the water in a small saucepan and let soak for 5 minutes. Add the 2/3 cups dextrose sugar and stir over low heat until the gelatine and sugar dissolve .
In a large bowl of an electric mixer, combine the gelatine mixture, corn syrup, and vanilla and beat for 15 minutes on high speed, until peaks form.
Spread the fluffy mixture in the prepared pan and smooth the top. Leave for two hours or until set.
With a wet knife, cut the marshmallow mixture into quarters and loosen around the edges. Sprinkle the remaining cornstarch-and-sugar mixture on a baking sheet and invert the marshmallow blocks onto it. Cut each quarter into nine pieces and roll each one in the starch and sugar.
Place the marshmallows on a cake rack covered with paper towels and let them stand over night to dry the surface slightly. Store airtight; the marshmallows will keep for a month.

wow, Great timing for this recipe since we're going camping in a couple weeks!! This is probably posted somewhere on this site,but where can I get glucose syrup? thanks!! carrie

I went in search for a recipe for that very reason. We are going camping with friends this weekend and I am sure marshmellows will come out. I could not believe how well they turned out. I will let you know how they do at the fire. I may have to make anouther batch for others to try them.

Just got back from our first camping trip of the season. Will definitely have to make a batch of these for the next one. Please let me know how it goes when you roast them. Thanks!

They roasted just fine. Now if I could just figure out something for the chocolate and gramcrackers and we would have a big winner. We just put them on a plate after roasting them. Let me know if you come up with anyting to have them with.

I plan on putting them with SF chocolate and Triscuits. I figure that is as close to a grahm cracker as I was going to get. I'm on vacation next week, so if we get a rainy day, that will be the I try them. Tammy

Do you happen to know of any cookies? Not ones that I have to make. Just ones I can buy? I don't have anything like that in my area. Hence, the triscuits. Figured they'd be better than saltines, anyway.
Maybe even a little choclate pudding would be good.

Hi All. Camping was fun and the marshmellows did turn out well. They seemed to melt quickly when roasting, and I had to keep them on ice during our trip to keep them from getting too gooey. Next time I'll probably put them in a smaller pan so they come out a little bigger when cut. I made the chocolate cookies posted on 5/5/05 by Tammy. About 1/2 way thru the cooking time of the cookies, I flattened them with a spatula and flipped them...the came out perfectly to sandwich a roasted marshmellow. Thank you Tammy and Nancy for the recipes!

Here is the recipe I have been using to make marshmallows. It uses only dextrose - no glucose syrup!
2 packages unflavored gelatin 2/3 c. water for gelatin 1/2 c. water for "syrup" 2 c. dextrose (I use dextrose monohydrate from our local brew shop) 1/2 tsp. salt 1 tsp. vanilla
Spray a baking pan with canola oil spray (I use a square glass casserole pan to make big fluffy marshmallows).
In a large mixing bowl, sprinkle gelatin over 2/3 c. cold water and let sit while you work on the "syrup."
In a small saucepan, combine 1/2 c. water and 2 c. dextrose. Stir over medium-high heat until dextrose is dissolved. Stop stirring and place a candy thermometer into the mixture. Boil sugar until temperature reaches 238 deg F (soft ball stage).
Remove from heat and add to the gelatin mixture. Hand stir with a whisk a few minutes to cool. Add 1/2 tsp. salt. Beat on high with a whisk attachment for about 8 minutes. Add 1 tsp. vanilla. Beat on high about 2 more minutes.
Pour marshmallow into greased baking pan. Lightly spray top of marshmallow and put a piece of parchment paper over the top to cover. Let sit for awhile until set. You can put in the fridge to speed up the process.
Cut into pieces and coat with dextrose (most recipes use cornstarch, but we seem to have some trouble with cornstarch and dextrose is pretty light and powdery so it works well).
Store in a tight container.
