I realize that Kristen's original chart has now been removed, but here is an updated chart that is posted on Dr Tolans site. He has revised some of the info and it is worth checking again as some things are ok (like the sugar alcohols) and some are listed as "NOT tolerated" (like stevia). www.bu.edu/aldolase/HFI/treatment/sugar_table.htm

I wonder why Stevia is on the not tolerated list, since it really isn't sugar. Do you think it is because it is an herb that just naturally contains fructose? I have tried a bit, and seem to be doing ok.

I really don't know. It may be just what they state: "Has not been rigorously tested for safety. No consistent manufacturing regulations."
He may just want to be sure before he tells anyone it's safe. Especially since it may vary from manufacturer to manufacturer. You can also drop him an e-mail and he will (eventually) get back to you.

This chart is Kristen's. Dr Tolan contacted Fred regarding posting it when it was loaded to a website that Fred manages. At that time the only information available was that stevia's recipe is not consitent. Kristen's chart stated 'May not be tolerated" it appears that Dr. Tolan has eliminated a good number of items from this category.
