I bought some xanthan gum the other day to try as a thickener. Sure enough it worked fabulously on the mapeline syrup. It disolves easily and a little goes a long ways.
I started thinking about this because after my grandmothers stroke a few years ago they gave us a product to thicken her water so she wouldn't choke. I went researching and found it's primarily xanthan gum.
