Salmon Fish Cakes. – Serves 2. Wheat free, dairy free and starch free. These are easy to make, light and delicious. Make good toddler food too as can be eaten with fingers. They can be made with other fish and other seasonings to suit. Salmon Fish Cakes by charliearnold, on Flickr Ingredients: Makes 8 small muffin size. 2 salmon fillets 2 teaspoons olive oil (or equivalent) 1 egg beaten Pinch of parsley Salt and pepper to season 1. Preheat oven to 180C, 350F, Gas 4. 2. Lightly fry the salmon steaks, or wrap in foil and cook lightly in the oven for 20 minutes. 3. Place the egg, oil, parsley, seasoning and salmon in a food blender and mix until well combined. 4. Spoon the mixture into greased mini muffin tins and bake for 10 to 15 minutes until cooked through and golden brown. The silicone muffin tins work well as they are less likely to stick.

They are really little Salmon Surflets Why cook the salmon first?? It will cook fine I would think as the egg cooks. You could also add thawed frozen cooked prawns so long as you make sure they are dried as much as possible to stop making the mix too wet. Smoked Salmon also would be very good in these Charlie just a thought how about spooning some of the mix part cooked Yorkshire puddings? If you only put in 1/2 the usual amount of batter in first give them 5 min in the oven unti the batter is rising up the sides of the muffin tins then add a spoonful of salmon/egg mix and return got the last 15 min in the hot oven? I bet that will work!

You can use all sorts of things for these, I have so far done spinach ones - they turned very bright green, bacon ones, chicken ones. Used with various ideas for dips. The wonder of these for us is that now I have to cut out as much starch as possible, but yes for HFI you could try it in batter, I challenge you, I just wonder if they would rise properly though...... Not sure really about that, the whole ideas is to make light bites.....
Yes, I suppose you don't need to cook the fish, except I used cook from frozen fillets. Careful with smoked salmon - no sugar added.....

Always careful about no added sugar will not go near "smoked bacon" unless its genuine smoked most butchers have a paint called "smoke flavour" which they paint on the bacon to make it smoked.. it really gives me a kicking and must be very sweet although I cannot taste it because it makes me Hypo for hours if I eat more than a couple of rashers.. The label dos not say it contains sugar but it certainly dose!
