As we are topical on eggs I thought I would test out a dish on Megs to see if eggs do set her off. Glutton for punishment or what, just got her settled and on a steady balance so now is the time to test. Why? well it will add in a great option for packed lunches and summer lunches if it works. If it doesn't I will be cursing myself but as I have a couple of quiet work days up ahead I can cope with the fallout!!!!
The usual warning about checking ingredients. Make sure your bacon is unsmoked preferably from a good source as alot of the cheap bacons have added sugar water to them.
This makes a great dish hot or cold for lunches.
Serves 4
175g / 6oz plain flour
40g / 1 1/2oz margarine
40g / 1 1/2 oz lard
3 to 4 desertspoon water
Filling:
175g / 6oz bacon
2 large eggs
300ml/ 1/2 pint milk
Flavouring as required salt, pepper and herbs.
Place the flour in a bowl and rub in the fat to resemble breadcrumbs. Bind to a dough with the water. Leave to rest for 5 to 10 minutes.
Roll out on a floured board to approx 10 inches / 25cm diameter. fit into an 8 inch / 20cm greased flan tin. Trim off excess pastry.
Cut bacon up into small pieces and lightly fry for about 5 minutes. Drain the fat. Place around flan base.
Whisk the eggs and milk gently together to avoid frothing. Add salt, pepper, herbs as required and pour over the bacon.
Place flan case on a baking tray and bake in a moderately hot oven Gas 6, 400F, 200C for 20 minutes then a further 10 to 12 minutes on Gas 4, 350F / 180C until golden brown and filling is set.
