OK not all these ingredients are ultra HFi safe.. however they are used in such small amounts it is unlikely to cause a problem unless you are in a very sensitive state in which case miss them out ! Low fat Beef mince (Ground beef) or Pork, Lamb, Chicken, Turkey all the same and all make good burgers.. although with Turkey and Chicken you need to add more oil or Fat and make sure they are completely cooked through. A full fat Blue cheese (I used some Stilton that was too ripe to eat by its self) but any strong flavoured cheese will do. Black pepper A Dash of Kirkoman Soy sauce A very few Celery seeds (these are tiny but FULL of flavour I used less than far less than 1g of them) A dash of hot chilli sauce (less than 1 teaspoon in 1Lb mince, 5g in 500g) 1 Clove of Garlic crushed and finely chopped (you can uses Garlic oil or Garlic salt for a HFI safer option. I added about 1/3rd weight of Cheese to Mince, mashed it all together with my hands and formed into burgers,, (pates) Fried till cooked Absolutely Gorgeous! Had them on a bed of rice with a fried mushrooms and an egg on top! YUM! Or as they say today NOM Nom Nom.. Enjoy.

If you use full fat mince rather than lean mince you get a much juicier burger.

Ahhh well you see I went for the healthy option... well sort of.. The amount of fat that came out was amazing.. The Lean mince was only 15% fat but I added 30% full fat cheese (40% fat) I also added although I did not list it a dash of toasted sesame oil. So if I have done my maths right the amount of fat was (15% of 500g) + (40% of 175g) + 10g sesame oil = (75g) + (70g) + 10 or approximately 155g fat!.. say 40 % saturated.. 62g .. Good job I drained off most of the fat! mmmm now what were my blood lipids last time I checked.. Oh yes.. not good Oh well once in a while should not hurt me too much.. (OK I had them on Wednesday night as well.. they were so good! Putting off next blood test for another month I think.. ) PS this will work really well with a mature Cheddar cheese as well.. thinking about it just about any cheese will do but the stronger more mature cheeses will make a tastier burger. OK time to buy some more mince and try different cheeses.. well maybe next week.
